Gilbert's

Enter a world of calm sophistication, which reflects the distinctive period architecture of the building. One of the most impressive rooms in the house, it was Gilbert's billiards room and still carries the evidence of his sense of humour in the flamboyant stone carvings. The inglenook fireplace, that once would have provided a warm welcome to Gilbert's guests, now plays host to those coming to enjoy a family lunch or an evening meal.

The Drawing Room

Once Gilbert's main dining room. Featuring a beautiful fireplace and flooded with natural daylight, the Drawing room offers the perfect place enjoy your meal whilst overlooking tranquil views of croquet lawn, terrace and gardens.

The Morning Room

Enjoy a more intimate setting with views of the woodlands over the west lawn. The Morning room was once the location of the properties only telephone which is still evident by the adjoining telephone room.

Tucked away, behind the great panel walls, you'll find the Library Bar, so named because this was the library where Gilbert wrote some of his most well known works and also where he created his last two operettas, notably "Utopia Ltd" & "The Grand Duke", in collaboration with Sullivan.

The bar was then a huge fireplace, it still features the copper surround Gilbert had installed. The white shelves, reputed to have held some 4000 volumes, are still a feature of this room although now they house our extensive range of Whiskies.

Surrounding Grim's Dyke is one of it's most spectacular features, the grounds, an enchanting mix of wild woodland and formal gardens. The perfect place to enjoy a morning coffee or light lunch.

Homegrown Produce

We have extensive orchards and vegetable gardens in the hotel grounds and wherever possible head chef Daren Mason and his team include seasonal fruit and vegetables in dishes for the restaurant menu. The hotel grounds are home to 30 fruit trees including plums, cherries, peaches and pears and 20 soft fruit bushes including red, black and white currants, gooseberries and raspberries.

In the orchard itself there are a further 50 specimens of apple and plum including some rare species of apple, some of which date back to the early 1700s. Among them are Ribston Pippin which was a favoured dessert apple in the Victorian era and Warner’s King, a late season culinary variety which originated in Kent again in the early 1700s.

The main crops grown in the vegetable gardens are fennel, carrots, beetroot, leeks, potatoes, courgettes, pumpkins, kale, chard, purple sprouting broccoli, french beans, runner beans, broad beans, turnips, rocket, oriental greens, jerusalem artichokes, tomatoes, chiliies, cucumber and lettuce.

There is also a herb garden that grows basil, parsley, lovage, thyme, sage and chervil mint. The herb garden also supplies the bar with mint for Pimms & Mojitos!
